Is it possible when you run out of black ink that there is a setting on the HP Envy Photo 7855 All-in-One Printer where I can select print in color only? The ink ran out before my ink level told me it was empty or close to it. I ordered more, but haven't received it yet. TIA

The Envy Photo 7855 can print or copy with just the color (or black) cartridge installed. The printer will automatically switch to single-cartridge mode. In your case remove the black cartridge, the color cartridge will be properly used even for printing black text. The printer will be slightly slower in single-cartridge mode.
