Bought a new printer today but cannot connect to my computer as it is an older mac running version 10 catalina. The printer needs to have a mac 11 os or higher to work, mine cannot update to this. Is there any way around this problem next to buying a new computer?

OK - it is possible (that) this can go either way.
The specifications say one thing and the Drivers and Software check shows something else.
There is an old (2021) Knowledge Base Article that might -- or might not -- be helpful.
- The printer supports the listed Operating System / versions and your OS/version is not included
- The specifications are wrong and in spite of being listed, your version is not supported
My opinion:
The printer is perhaps not supported in your MacOS version.
It makes sense -- HP Smart is the only software listed and it only runs on certain OS versions.
True, too, the "oldest supported OS version" supported by HP Smart is a moving target.
Every so often, the updated / latest version of the application no longer support the older / oldest OS versions.
