Since a few weeks this message appeared on my printer saying the ink is almost empty.
I can press OK one time, I get a message tone for confirmation, but the screen freezes afterwards remaining the same.
After that, the only thing I can do is a complete power reset, to receive the same message.
I still have like 10-20% left on my cartridge so I refuse to change my cartridge already because of this bugg 😄
Conclusion, since this message I cannot use my printer anymore from the control panel, printing or scanning from laptop does still work.

Welcome to the HP User Community.
If supported on your printer, set the warning level to suit your situation.
That said, changing the warning won't help if the ink supply actually falters.
In the case of a failing ink cartridge, the only solution is to replace the cartridge.
Try / Consider
If your printer is on the network,
If it supports the Embedded Web Server (EWS)
and
If the feature is supported on your printer - change the Supply settings to "Custom" and add your setting.
Suggestion: Set to no less than 5% - even that might be too low - "Try and See"
Enable Low Ink Warning / Adjust the Printer Supply Settings - Set Custom Alert level
Open your favorite browser > type / enter Printer IP address into URL / Address bar
Tab Settings > Supplies > Supply Settings
Example - EWS - Settings > Supplies > Supply Settings > Cartridge Low Settings

Unfortunate - True that the Pro 8000 series does not have "everything".
I cannot find a way to adjust it if the setting is not supported in your printer.
You have said you won't replace the cartridge,
If you decide to do so, the error will likely disappear.

Indeed I suppose that would be the solution, I just ordered new cartridges.
If anyone else has a suggestion, always interested!
@HP, could you please check this issue in your next firmware update of this device?

Sorry you ended up doing what you were trying to avoid...
It's not the first time I've offered a solution that the Pro 8020 series does not support.
There are a number of differences in the 9020s - lack of this feature / setting is apparently one of those.
Apologies for the "false hope" and I'll keep this in mind for another time.
