I have the HP Envy 5660 printer and cannot get it to print B&W when the color cartridge is low. I’ve read you select B&W only, but it then prints only in color- I end up with a half page of pale yellow. I’ve also seen there are models that will only print if both cartridges are full. Please help me understand how to resolve this.

Superb description and stupendous diagnosis of the issue before posting. Kudos to you for that. 😊
I see your printers model uses two cartridges (one black, one tri-color) and can print if one cartridge is empty.
To continue printing, remove the empty cartridge from the printer.
Select OK if a Single-cartridge mode message displays.
If you are using the black cartridge, prints are in black and white (grayscale).
If using the color cartridge, colors print normally but black prints lighter than usual.
You can continue to print until the print quality becomes unacceptable.
If you are facing other print quality issue, then please follow the instructions in the link below to resolve the issue.
