HP Designjet Printers - Mac Compatible Designjet Printers web page lists compatibility:
My iMac OS is 10.13. Will it work?
If not, does HP plan on extending compatibility for newer Mac OS?

Your printer is compatible with 10.13, you may download and install its drivers below, either the Raster or the PostScript driver should work:

Does the Z6600 need to have Postscript capability or card installed to work?
The HP Customer Support - Knowledge Base link I suggests only the Postscript driver: https://support.hp.com/us-en/document/c04486562
We installed and tried both Raster and Postscript drivers. I'm able to connect to the printer using a Generic PCL Laser Printer. This configuration only prints in black and white. The largest print is 11x17. There's no additional large format options. Strangely, it offers duplexing. When I select and set up a custom size, it prints black and white size: 8.5x11

Please try to reinstall the Raster driver, be sure to select the correct driver within the Use drop-down menu when adding the printer from Printers & Scanners, a Postscript Support is optional and require an upgrade kit:
HP-GL/2, HP-RTL drivers for Windows; PostScript Windows and Mac drivers with optional PostScript/PDF Upgrade Kit
