How do I change the email address used to print to my printer?
I DO NOT want to change the associated account email, just the email I send to when printing via email to the printer.
The one assigned now is xxxxxxxxxxx@hpeprint.com
With my old 8720, it was very easy to change that to a personalized address, like [Personal Information Removed].
How do I do that now?
I've seen lots of old messages here that lead me through old versions of web pages, and menus on the printer that don't match what's there now. And in half, the agent seems to misunderstand and try to change the account's associated email. That's NOT what I'm trying to do.
Can someone steer me in the right direction?

Sounds like you just want to update / change the printer's email address.
For example, Old address:
MyFancyPrinter @ hpeprint.com
MyDizzyPrinter @ hpeprint.com
If this is the case,
Log into your HP Smart / HP Connected account.
NOTE: Normally when I open the web site and then sign in, a box immediately pops up that offers to "change the printer's email address".
If the pop-up doesn't magically appear, the setting is still available somewhere on the web page.
Click Flag to switch to your region
What else?
If you ever do want to change the "controlling" account that manages your HP Smart / HP Connected service / printer, do that using your Dashboard login.
HP Account - Login / Dashboard
Note: Log into your HP Account if / when you need central access to your device information, including the ability to update your personal information.
If you change the account log in, this changes the HP Smart / HP Connected "master" email, that is, the main sender email attached to the account. Your other "allowed senders" list should remain unaffected.

I wish it was that easy. 😀
Yes, that's precisely what I want to do. But when I log in to HP Smart, (which I've done numerous times looking for that elusive "setting is still available somewhere on the web page". I obviously have not been getting such a pop-up when I log in, or I'd have had no problem doing what I want.
When I log in, I get a Dashboard showing my printer, status, and connectivity, but with no menus available to do what I need.
I've tried clicking on all the options on the "Printers" tile, and tried all the ones in the menu at the left, but NOWHERE that I can find offers me the "change email address of printer" option.
When I click on my printer, I get this tile:
I may be missing something, but I sure don't see it. The Printer Options (a natural place to put my desired function) has only this:
I appreciate the reply, but I still have no idea where to go from here.

Well, it appears the screenshots don't show up after posting as they did when I was composing the post...
Don't know why THAT is, either. Probably a file format problem.
I'll try here with a conversion to .JPG.

Images must traverse an approval process before they are available for public viewing.
Ignore it.
I don't see or have anything at all like what you describe.

It appears you are logged into a completely different version of both the HP Smart / HP Connected Login AND a different HP Account > Dashboard link, too.
I would guess this is because you are an Instant Ink Customer AND an HP + customer.
I have neither of these. My web page support is displayed differently for HP Smart / HP Connected and for my HP Account.
Regardless, it is different enough that I cannot navigate the setup for you.
What to do?
Your OfficeJet Pro 8025e HP+ printer service comes with Concierge setup / support.
Open your printer home page and click to connect with Concierge support.
OR
Wait for an agent / moderator to help you.
I will forward a request for Review.

Note that Concierge assistance is only for HP+ printers AND is likely only available during regular business days and times (weekdays during regular business hours).
NOTE: Where available, the Homepage website for the non HP+ model includes any missing "Category" sections not found in the HP+ printer site. What? The “+” and “not +” printers are the same printer – HP+ is a benefit / service.

I understand you would like to change the printer's ePrint email address.

Go to HP Smart (in English), and then sign into your account.

Under ePrint Address, enter the name you want to use, and then click Submit.

Inform any other authorized users of the new address.

Thanks for jumping in.
I asked for help because I cannot reconcile the URL / websites we are posting with what the customer says he / she / they are seeing.
Side Bar: Your link actually opens the "Add Printer" view - No problem, just click "My Printers" to open the Printer page.
That said, @FrustratedRon is saying that the HP Smart links we have provided to him / her / them do not open the same window where one can access the information to change the email address.
Frankly, I don't recognize the image (in Ron's first post) - Perhaps ...
1. The link the customer is using to open the "different looking" web site / page is not the same web page / not the same URL as the link I posted to open HP Smart / HP Connected Login .
OR
2. The link you provided - essentially the same link / website that I posted - is not going to work either.
Questions:
Is there another reason that whatever the customer is seeing would be the result of correctly using the links we posted?
For example, does having an Instant Ink account really torque the correct URL website that much that it cannot be recognized?
I don't use Instant Ink and (so) cannot test / open an Instant Ink account view.

As Dragon-Fur has said, the screens I see are nothing like the ones you show. On my old HPconnected account for my 8720, (now unused) they worked that way. I could certainly figure it out with that menu train.
But now, I'm getting a totally different set of screens, none of which offer me the options shown in your message.
I tried to post screenshots in my earlier message, but the system wasn't showing them yet.

I'm an HP+ user, so I'll give them a try.
I appreciate your help here, too. It just does match up with what I'm seeing recommended.
I guess the images were released, and as you can see, it's a totally different page.
