Not sure how to do this in-system. No MacOS in home office.
From what little I remember, the print settings dialog might have a horizontal bar across the menu / window that drops open the settings window. ??
Try using EWS to view / adjust the default paper size and type settings in the printer.

EWS – Browser – Tray and Paper Management
Open your Browser > Type / enter the Printer IP address into URL / Address bar
Tab Settings > Preferences > Tray and Paper (Management)
Select / Adjust settings for Paper Size / Type
Model Dependent: Advanced section
Click Apply to save changes
