It's a bit tricky but at the selection of software, there is an option for FULL software.
The HP Easy Start would show HP Smart as first option but the FULL software is there, just need to scroll and select it to install.

Hi,
Thanks for using the HP Support Community. There is a Scan to Editable Text option with the HP Scan software (under the HP FULL software solution)
Example:
Can you download and install the FULL featured printer software from HP for your operating system:
https://support.hp.com/sg-en/drivers/selfservice/swdetails/hp-officejet-pro-9010-all-in-one-printer-...
Once you have downloaded and installed the FULL feature software, you will be able to print and scan.

The keyword was FULL. In my previous attempts I was cought in HP SMART, which as I understand now means LESS SMART. I can recommend installing the FULL installation to get FULL Function of what you bought,
