After a driver update (driver from HP website) my config report still shows A4 (which I want) but printer always prints Letter size even after changing print dialogue

I've rolled back to the driver selected by Windows (NPI91046C) and set Printer Properties and Printing Preferences to A4. That seems to have done it. Very many thanks for your help. Star!

What about internal pages from the printer's Reports menu how are those printed?

These come out fine as A4. The Configuration Report shows Paper Size = A4. Is this a problem with HP's driver?

Yes, that confirms the printer is working properly. Now you need to figure out where in the new driver paper is set to Letter and change it to A4. Try go to printers and scanners then Printer properties -> Device settings

Thanks Valsimot. That's a good start. I've set all relevant settings to A4 in Printer properties / Device settings, but when I try to set Printing Preferences to A4 it won't change from Letter.

If not able to choose paper size do a driver rollback to get old driver
