I am having the similar issues on Big Sur with the Officeject 4500 G510n-z.
HP Smart app installs and starts (though crashes on occasion) but does not detect printer at all.
HP Easy Start app installs, runs, was able to run uninstall steps, and detects printer correctly, but then cannot install the printer. Then provides a link to go online, where a success web page is rendered but the printer is not installed and I cannot print.
HP Drivers 5.1 will not install, states the install volume does not meet the update requirements
The actual OS X Printer settings detects printer and lets me add it, but then does not actually print or scan.

HP Officejet 4500 Wireless All-in-One Printer - G510n driver for macOS 11.1 are not available from the HP website or Apple Software Update. However, Gutenprint (formerly called Gimp-Print) provides open-source basic print drivers for many printers that would otherwise not be supported in Mac OS X. To see if your printer is supported, go to Gutenprint drivers for more information.
NOTE: Gutenprint drivers are not supported by HP or Apple.
