Try doing it in this order:
The solution seems to be to: Use Easy Start (https://support.hp.com/us-en/drivers/selfservice/hp-easy-start/7376041 - make sure your OS is correct) and see if your printer is supported. If not, move on to the next steps.
Uninstall your printer USING THIS METHOD ONLY (NOT EASY START, NOT EASY ADMIN): Apple Logo (Upper Left of Screen)/System Preferences/Printers & Scanners. Then restart your computer.
Download (and install) this package (From HP FTP) which will update drivers AND THE CERTIFICATE:
ftp://ftp.hp.com/pub/softlib/software12/HP_Quick_Start/osx/Installations/Essentials/hp-printer-essen... If the link comes up blank, try right/control clicking and saving it.
The install takes a bit. Let it run, even if it seems like it stalled out! When it completes, restart.
Then reinstall your printer using: Apple Logo (Upper Left of Screen)/System Preferences/Printers & Scanners, and use the default drivers. If drivers do not show up, download and install the 5.1 driver package from here: https://support.apple.com/kb/dl1888?locale=en_US . Then restart your computer.
It is NOT the same as the driver package, Easy Start, or Easy Admin other people are recommending.

Thanks for all your help. I performed all the steps (multiple times). The printer still doesn't work. The scanner does and printing a testpage does. I'm afraid the software doesn't support this printer anymore.

It likely still does. Try things in this order (this is the first time I've posted this exact set):
Use the HP Uninstaller: https://support.hp.com/us-en/document/c02440673
If you still have a folder marked HP, delete it.
Use Easy Start (https://support.hp.com/us-en/drivers/selfservice/hp-easy-start/7376041 - make sure your OS is correct) and see if your printer is supported. If not, move on to the next steps.

If you get the malware warning part-way through the installation, go to System Preferences>Security & Privacy where you can tick a box and unblock the HP option.

Thank you! What helped, was to remove all currently uses printer drivers and reinstalled the driver through the system preferences panel as you indicated! It works now! Thanks for your time.
From the menu bar in the Finder, choose Go > Go to Folder. Type /Library/Printers/
and click Go.The Printers folder opens. Choose Edit > Select All, which selects all items in the Printers folder.
Choose File > New Folder with Selection, which puts all of the selected items into a new folder named New Folder With Items. To save storage space, you can delete this folder.

I managed to get it working, thankfully! I did some more research and found this post from:

I deleted the printer from printer settings, and clicked the "Show in finder" folder, then deleted the "hp" folder under /Library/Printers/
Then I re-added it in the system preferences (NOT downloading any drivers from HP's site). It gave me a pop up that said "Drivers need to be downloaded from Apple", and then it downloaded and installed them successfully - it now prints fine and the issue is resolved.
