how do I get my HP Color Laser Jet Pro MFP 4301 printer to default to grayscale?

Depends on the driver you are using. Typically on you PC go to control panel>devices and printers and then right click on the icon for your printer and select printer properties from the dropdown menu. Then click on printer preferences clock on the color tab and change to greyscale and save.
