Welcome to the HP Community.
Where to start...
If you have not done so,
Understand the basics...
Read the User Guide
At least these chapters / sections:

Losing the connection from Printer to Network
One source of the problem is perhaps related to how the printer is connected to your network.
For example,
Printer Specifications for HP OfficeJet Pro 8700 Printers
Printers in this series support Ethernet connection.
This is generally your best option if you don't understand or cannot use the Wireless configuration.
In the same "connection" discussion, and assuming that for any reason you cannot use Ethernet, loss of connection might be due to traffic on your network, a mis-configured port assignment, a poor signal, the network router changing or losing track of the printer's IP address.
The printer software might need to be completely uninstalled and reloaded.
One of the more common mistakes: Setting the printer up on a standard Wireless connection and then leaving Wi-Fi Direct toggled to ON - these are not compatible with each other.
===================================================================================
Less Common Sources of Connection Loss
There are a multitude of other causes for persistent "offline" issues that are less common - unless you've tried all the "obvious" fixes, even listing the less common causes is likely confusing without being helpful.
One Example - less common - can affect printer performance
Connecting the printer power to a surge protector (as opposed to plugging the printer into an appropriate wall outlet) can cause the printer to fail in various ways - booting the printer or scanning (for example) draws a lot of power - a wimpy surge protector might prevent the printer from drawing the power it needs. Related? Maybe.

What you do next depends a great deal on what you have already tried to fix the problem.
What have you already tried?
Examples - not all inclusive

Traffic and Interference
For the purposes of testing the printer connection,
Switch off most other devices that use your network. For example, switch off game boxes, phones, and other "non" computer devices.
Reboot the printer - check the router for printer logs.
When the printer loses connection - check those logs again.
+++++++++++++++++++++++++++++++++++++++++++
Connection Type
Change the printer connection type to TCP/IP
Easy to do and might be enough to solve the problem.
Method - Create TCP IP port
** Install – Optional - Port Issues - Create a TCP/IP port **
TCP/IP can resolve odd connection, scanning, and installation problems.
Create / Switch to a TCP/IP Port to facilitate communication and prevent ‘offline’ issues
How-to “Create TCP Port” Contributed by greenturtle
1. Print a Configuration Page to get the printer's IPv4 address (you can also tap on the wireless icon on the Front panel of your Printer to get the IP address)
2. On your PC, go to Control Panel, from Devices and Printers, Right-Click the printer and Left-Click Printer Properties, select the Ports tab.
3. Click Add Port, select Standard TCP/IP Port, then select New Port and follow the wizard.
4. Type in the proper IP address for the printer.
This video resource will show you how to do it:
Create & Use TCP IP port
Note that you can ALWAYS revert back to the original port that the HP software installed by selecting the HP port within the Ports tab (in Printer Properties)
+++++++++++++++++++++++++++++++++++++++++++
Connection - Static IP Address
When the network loses track of the printer IP address, the connection to the printer can drop.
Consider using a static (permanent) IP address on the printer
Wireless Center > Section: Common Questions > Topic Connection Issues
Section: Improve Wireless communication by setting a manual (static) IP address
+++++++++++++++++++++++++++++++++++++++++++
Connection - Separately named SSID network for dual band / frequency networks.
Your printer supports connection to the 2.4GHz band / frequency.
Wireless Center > Section: Common Questions > Topic Printer no longer works on network
Section: Mesh Networks
Example - Dual Band Network
SSID_Dual_Band_Example_7

Want to try something that might "fix it" for you?
Resource – Choose the right doctor for the job
Open Website
HP Print and Scan Doctor for Windows
Click the green Download Now option / box
Wait!
If the problem / issue is one of
- Printer is Offline
- Cannot print in Color
- Duplex printing has disappeared
Try this “Offline” Doctor version:
http://ftp.hp.com/pub/printers/hppsdr/patches/HPPSdr.exe
NOTES – The “Offline” doctor
As a result of repairing issues,
Offline / Color check / Duplex check version of the Doctor may replace the printer or add a “(Copy 1)” version of the driver in Devices and Printers.
If there are two printers in Devices and Printers,
If one of them does not work,
Try sending your job to the “Copy 1” named printer.
If you want / need to rename the “Copy 1” printer:
Open Control Panel > icon view > Devices and Printers
Right-Click on the printer name > Printer Properties > Tab General >
In the top box, Edit the name of the printer (For example, remove the part that says “Copy 1”)
Click Apply / OK to save change
NOTE: The name change may take a bit of time (a few minutes), else Restart the computer and log in.
