My MacBook uses ethernet, not WiFi. How do I stop the blue blinking WiFi light?

You may turn off the wireless radio on the printer.

HP LaserJet Pro, Ultra M102-M106 Printers - Blinking Lights | HP® Customer  Support

1- Wireless button. Toggle to ON/OFF

Once the wireless radio is OFF, there will be no blue light.
