If you were given the address as an "allowed" user and you are not the owner of the account that controls the ePrint service on the printer, you cannot change the email address. Contact the owner of the HP Smart / HP Connected account.
If you are the owner of the HP Smart / HP Connected account where the printer is controlled, you can control who has access to the printer by adjusting the "Allowed list" of email addresses. If one or more "Allowed" email addresses has been compromised (the person lost control of his email or his email was compromised by thieves or other), then yes, it is time to change the email address to the printer.
If you are using an "Allowed" user list and you change the email address, you will need to alert the people in the Allowed list.
