I can email a file for printing.
However, when I try to scan to email (the printer app). I get an error that the server is not available or it's busy.
No problem with internet connection - the ethernet cable is connected, and as I mentioned, emails sent to the printer are printing well.

I understand you are not able to send scans to emails.
Did you make any changes to the settings? If not, wait for a couple of days, it might be an issue with the HP server.
Restart web services
Click here to know how to turn off web services. Refer to this document to know how to turn it on.
Perform the steps mentioned in this document and Cannot Connect to Web Services
