Hello
My Printer - HP ENVY Photo 6230 Wifi Printer
My printer is on a network and goes offline from time to time because the router assigns a different IP address occasionally.
I therefore wish to assign a static IP address to avoid this situation.
Please advise - full details please.

Welcome to the HP User Community.
Update >>
After the static / manual IP address is assigned, the connection will break (for example, after you click "Apply" to update the settings using EWS). Wait a few seconds -- as long as you can stand it, say 10-15 seconds - open a new connection to EWS (using the new IP) to check / see the results of your work.
and
Log into your router and Edit your router configuration to match the assigned setup, of course.
