The HP Smart App has recently had an update which now requires me to login to a cloud account to scan or print an item. Exactly what data is sent to the cloud when I scan or print a document now? Does any content of the scan or printed document leave my wireless network and get sent to the cloud (even if this is encrypted)?

The information on how data is collected and used is located in HP Smart.
Observations / Comments (My opinion based on my experience)
In general, nothing you scan or print is saved on any HP Server.
In particular, data you send to your printer's email address (somename @ hpeprint.com) is kept on the server long enough to be sent along to the printer. The data is not saved on the server nor is it accessible by you or by HP after the job is either completed or if the job fails.
If you "Share to Email" the data is shunted directly along to the email service you are using (from and to addresses). Cloud Service does not save the email and it is not directly (or even indirectly) accessible by HP or by any except the recipient of the email message.
The "no human reads the data" and "no backups are made of the data" is why "previous jobs" are never available for later retrieval. The only way to get a "backup" of what you send to the printer is to send a copy of the job to another recipient - that is, Cc (copy) yourself or another email address.

How to find:
Open HP Smart for Windows application
Wait for the application to fully open (several seconds)
Click on the App Settings wheel
Select Privacy Settings
Read the data / documents available.
