I have an HP8600 Plus and have been trying to copy from colored paper with black text on it to colored paper , but always seem to get a grayscale background on the copy or if I scan to pdf it tries to adjust the color to the scanned document?
Is htere any way to copy from color to color with the text?

This will be pretty difficult to pull off if not impossible. because the scanner will see the coloured page and try to replicate that colour. In black and white mode this will come out with a greyscale effect. Your best bet may be to scan the file in as full colour to a PC, adn then use third party software to see if you can transfer the text to a white background. I wasn't able to find anything directly designed to do this, but its almost certainly out there as some high end office printers have settings to do this, but nothing that i've seen at a consumer price level.
The far easier option if possible will be to get a copy of the document already on plain paper, and simply copy it to the coloured paper so its only trying to print the black text.

Im not sure if the settings would be the same but I have an HP Office Jet 8610 and what I first had to do was scan the document. Before you actually scan there is an option for document type (the square on the left) and I clicked on "PDF Black". Then on the bottom left there is the setting button. I went to "Lighter/Darker" and adjusted the settings so that it was the lightest possible then clicked done. When the document scans the background becomes white and it is just the text.
