I called HP support today. After going trough what different solutiions I tried (with no luck), they seemed to take this seriously and decided to escalate this in their organization. I'll probably get some kind of reply in about a week.
I gave them the address to this thread.

My Web Services worked (ePrint, at least) until the Automatic update changed my firmware from ELM1CN1320AR to ELM1CN1409AR. It hasn't been able to connect to Web Services ever since.
I've manually set the IP, DNS, etc. and have done a semi-full reset (along with all the ink it burns through) and still nothing. As I mentioned, it worked before the "upgrade" so router/firewall issues are not the problem.
BTW - I contacted HP and they said my printer was out of warranty even though I only bought it in mid-February 2014. I sent them my proof of purchase and they promised to repsond within one business day. It's been well over a week and I haven't heard a thing.

I got a follow up call from HP today. After going trough a number of tests, the conclusion was that my 7520 was "out of help". They will now send a (tested) replacement printer (I already got a notice from UPS).

I have printed the Wireless Network Test Results and everything looks great. Also the Network Configuration page looks great. My network name, Says it is connected to the Internet. I was able to download updates. IP Address looks right.
I downloaded and ran the HP PRint and Scan Doctor and it crashed.
