Printer displays General Printer Error, I have powered off, unplugged, waited 15 minutes, powered back up and same error. It also mentions somethin about the ink system. I have used non genuine cartridges due to the cost of the genuine ones. Will installing genuine ones now work

Please read this post and then provide some details. What printer model? What exactly is the error message about the ink system?
It sounds like a printer with separate ink supplies and printhead, with "plumbing" to connect them. If that is the case replacing the cartridges with genuine HP may or may not resolve the issue.

It's the HP Officejet Pro 8600. Product N* CM749A Model N* N911a.
The error message specifically says, 'There is a problem with the printer or ink system Turn the printer off, then on. If problem persists, contact HP'......Good luck with contacting HP. There are 500 options, non of which are helpful. What happened to the days of service when you could contact a real person or a service person to assist you. Happy to pay, just want it sorted.

The Officejet Pro 8600 series is actually my favorite, I have used one at home for the past decade. The ink system is simpler than its predecessor, the Officejet 8500 which had long plumbing tubes. That said, repairing it may be a risk as it is nearing its end of support life.
The printhead for the Officejet Pro 8600 series is replaceable, see the document here for information. The printhead assembly includes a set of cartridges and replacing the printhead will likely resolve the issue, but it may be difficult to find. The HP parts site no longer lists the part. You would look for the CR324A.

Fix printer connection and printing problems in Windows
Unplug and restart your printer. ...
Check cables or wireless connection.
Uninstall and reinstall your printer.
Install the latest driver for your printer.
Clear and reset the print spooler.
Change a printer's status to "online"
Unplug and restart your printer.
