Sometimes in the middle of a print job, a message will show up - "Envy 7858 out of paper." - and the printing stops. It's NOT out of paper...it can happen with 50+ sheets in the tray. I check the paper, making sure it's pushed all the way in, etc. It always is. The only way I've found to get rid of the message and be able to resume printing is to power down the printer and reboot. It's very annoying. Have just had this printer for a few months. Is there a fix, or is the sensor bad?

I see that you're experiencing false out of paper error on the printer, I'd recommend you follow the steps from the document 'Out of Paper' Displays, Printer Does Not Pick Up Paper to resolve the issue.
Additionally, Update the printer firmware
Download available firmware updates from the HP website
With the printer on and connected to the computer, go to HP Customer Support - Software and Driver Downloads, and then identify your printer. Look for and install any available firmware updates. Refer to the document HP Printers - Updating or Upgrading Printer Firmware

Thank you for your response! I checked the firmware in the Support section and it says the printer is already updated. I also looked at the article you referenced, but it doesn't exactly apply to my issue. There's no problem with my rollers or feeders grabbing the paper. The problem is that the printer thinks there's no paper in the tray and it doesn't even try to grab any paper or print. I've done all I can do to the paper and the insertion, as listed in that article, prior to posting for help.
It doesn't do this all the time, but when it does, it's very frustrating, especially since the tray has plenty of paper. I'm wondering if there's a faulty sensor, or what would you suggest I do next?

Before we conclude this to be a sensor issue, let us perform a full reset and re-initialize the printer.
The reset instructions are specific for your printer and performing those steps on a different printer may brick the device.
I've sent you a private message with reset instructions, follow the reset instruction to perform a full reset and re-initialize the printer.

Follow the steps below to complete the reset-
-
Press Power button to turn the Printer On.
-
Press BL, BL, BL, BL (Bottom left icon. The “return arrow" symbol which may not be highlighted. Look very closely to find it and tap on it 4 times) Buttons, in sequence.

Touch Support Menu.

Select Reset Menu and Touch OK.

Select Semi-Full Reset and Touch OK.
-
Wait for unit to Power Down/Turn Off.
-
Press Power button to turn the Printer On.
