Hp OfficeJet 3830 Trying to print postcards/business cards in color on specialty paper

HP Recommended
HP Windows 7 Home Prem OA
Microsoft Windows 7 (32-bit)

I am attempting to print out some postcards and business cards. These need to be on the Avery paper I purchased. When I change the setting to print on either HP Matte Brochure or Professional Paper OR Other Matte Inkjet Paper it will print fine on the paper but just not in color like I've selected it to. I just put in a new color cartridge's and color prints fine on other projects.

Please help
