HP ENVY 5640 e-All-in-One Printer

Hi there

Im currently having problems changing my printing preferences to ‘HP Photo’ > ‘Black & White’. I have been printing this setting for a while now for my vinyl label stickers and all of a sudden there are locks of my printer settings and it is coming up with the below error. How do I fix this? I need it to be black & white and not colour or greyscale as the labels come out grey rather then black (even though the label on the computer is black). I also need it on Photo paper as the paper I use photo (sticker) paper.

I have removed the printer and installed it back but nothing seems to work. Is anyone able to assist please?
