Product: Office Jet Pro 8600
Operating System: macOS 10.14 Mojave

Due to current weird issues with our office's network, I'm having to print documents from a USB drive. However, once I insert the drive, the printer only recognized image files, and not Pdf's or Word docs. Is there a setting I can change or something? Not a big deal, but I don't want to have to export/convert every document into an image file. Thanks!

Sorry, the Officejet Pro 8600 did not have the capability to print PDF's or Word files from USB drives, it only supported image files.  Some later models such as the HP Officejet Pro 8730 or 8740 do permit printing PDF files from USB drives.
