HP Support,
I have the HP OfficeJet Pro 8610 as well and am experiencing the same issue, "Ink Cartridges Depleted." I'm receiving this error after installing my printer with new ink cartridges. I've performed the steps outlined below in your post from '17, but that didn't seem to fix the issue; when the printer restarted itself after I plugged back in the power cable to the back of the printer, the same depleted cartridges message appeared.
In the post below, you provide a link to do a firmware update, which might help the issue, however, that link is no longer available. Are you able to reshare it, or, do you have any other ideas to help troubleshoot this?
Oh, and I also tried whipping off the copper piece on each cartridge, but that did not work either.

Have you tried checking with your old ink cartridge? Do you get the same error?
You can continue printing, press OK on the printer control panel, or click OK on the computer screen to close the message and continue printing.
Refer this article to know more information about ink cartridge issues.
Also, try the steps recommended below.
In some cases, removing the ink cartridges and resetting the printer can clear the error message.
Turn on the printer.
Wait until the printer is idle and silent before you continue.
Disconnect the USB cable from the rear of the printer. If your printer has a network or wireless connection, leave it connected.
Remove the ink cartridges from the printer.
With the printer turned on, disconnect the power cord from the rear of the printer and from the wall outlet or power strip.
Wait at least 60 seconds.
Plug the power cord back into the wall outlet.
NOTE:
HP recommends connecting the printer power cord directly to a wall outlet.
Reconnect the power cord to the rear of the printer.
Turn on the printer, if it does not automatically turn on.
The printer might go through a warm-up period. The printer lights might flash, and the carriage might move.
Wait until the warm-up period finishes and your printer is idle and silent before you proceed.
Reinsert the ink cartridges, and then close the ink cartridge access door.
If you receive a prompt to print a calibration page, do so.
If you disconnected the USB cable, reconnect it to the rear of the printer.
Try to print.
If the issue persists, continue to the next step from this support document - Ink Cartridge Errors
You may also try to update the printer firmware:
If your printer connected wirelessly, make sure to temporary connect the device with USB and then follow the link to install the latest firmware update on your printer from our HP support website. Alternatively you can also try to update the printer firmware directly from the printer control panel.
