I have changed the black cartridge three times, all new official HP cartridges, start again, open and close cartridges again, install software again. It keeps printing using only the other colours. It doesn't know the ink level of black. It is also not possible to do a firmware update. Please help!

As I understand you have tried to use three new black ink cartridges and unfortunately nothing has helped to resolve this issue.
I would personally suspect this to be an issue with the printhead or the printer itself.
Before you go ahead and contact our HP support for further assistance, I would like to ensure you have followed all the steps from these documents
HP Photosmart Plus B210 Printers - Color or Black Ink Not Printing
Please make sure that you have tried to clean the printhead manually.
If you have tried all the steps suggested and still having the issue. I would recommend you contact our HP support team to get printer service or possible upgrade options.
HP support can be reached on www.hp.com/contacthp
Select the product type.
Enter the serial number of your device or select let HP detect your product option.
Select the country from the drop-down.
You should see the HP phone support number or Chat option listed.

In the mean time I had changed the black cartridges so many times that I didn't know anymore which was the newest. Now that I found it, the previous problem has been solved, but now a thin dirty black line appears all over the page, vertically.
What could be the solution for this? Clean the printhead manually again?

If the issue is to do with Vertical streaks, then this could be an issue with the Hardware, I would suggest you try to clean the cartridge contacts as well clean the rollers and the scanner glass.

You may follow the steps suggested in this support document which gives the steps to clean the rollers - 'Out of Paper' Error Message and the Printer Does Not Pick Up or Feed Paper
