I've read everything I can find on this site about turning off the two-sided printing in the default settings. Is there REALLY NO option for this? This has NEVER been a problem with any of your printers before. Are you truly saying my options are:
1. Unclick the TWO-SIDED option every time you print. And hope you don't forget and mess up 20 pages of paper.
2. Set your own printing preset and go FIND it and CLICK IT EVERY TIME you print. And hope you don't forget and mess up 20 pages of paper.
I've always used the option to return to default after each print job because some print jobs are special. HOWEVER, default is set to TWO-SIDED printing so that is what I get. My family has waisted so much paper because you have made us accustomed to default printing is ONE-SIDED. What is going on?

@RoryW, Welcome to the HP Support Community!
Which application are you using to print from?
Update the printer firmware
Click here to download and install the latest firmware from your MAC.
Click here to know different methods of updating printer firmware.
Also, check for any software updates on MAC
Open the document you want to print, click File, click Print, and then click Show Details, if necessary.
Click on the Unnamed menu fro the drop-down menu to appear, select Layout
Here you will find Two-sided > Off
Save and print a document to make the settings as default.
Let me know how this goes.
