I have an HP Deskjet 1112 Printer. I print in B&W 99.9% of the time. Can I just use only a blk cartridge without any real difference in print quality or do I need to use a color cartridge with it?

The print quality for text will be virtually identical with just the black cartridge installed. The one exception would be Best quality mode, where there will be a very slight improvement with a color cartridge installed. (In best mode black is underprinted with color which makes the text darker. You probably would not notice the difference unless you had a sheet printed each way and examine them closely side by side.
Graphics would not be as good with only the black cartridge, the black droplets are significantly larger than the color droplets so the prints will be a bit more grainy (and of course in grayscale).
