I would like to print my digital art onto inkjet canvas paper. This is not an option on the paper list so would like to know what choice would give the best results.

The Envy 5020 printer is a budget printer that provides support for a variety of paper types - "canvas" is not one of these.
Media

The "250 gsm" supported for Photo Paper might work - but many printers cannot be fooled into thinking that photo paper is being used if photo paper is not actually loaded in the printer tray. Printer can usually sense photo paper as compared to other Media loaded in the tray.
If your "canvas" paper has a rough surface (as compared to regular paper, for example), the paper - even if it is within the weight category (for say, Brochure Paper 180 gsm), may get "stuck" in the printer (or fail to feed at all).
So, the answer:
- This printer is not the right tool for the job.
- Regardless of settings, the paper may get stuck or fail to feed.
- Paper that is not Photo Paper cannot (normally) be selected as Ponto Paper to make use of the heavier allowance for photo paper.
Still want to "have a go"?
- If you paper falls within the limit for Brochure paper (typically 180 gsm), select Media type: Brochure Matte (or similar), or perhaps "Other Matte Inkjet Papers" Or "HP Card" (up to 200 gsm) in your print settings.
