I recently had advice on how to set up the printer with a MacBook .. printing now working fine. (and Thnx for that)
However, on advice - I installed the HP Easy Scan application. 1.9.1 (120)
I start it > Press Scan
Changes to "Preparing to Scan"
The printer comes into life and physical scan starts
Changes to "Scanning" and barber pole is moving
Printer mechanics finish Scan
Changes to "processing" but Barber pole freezes
MacBook cursor if moved into app window changes to Spinning Beachball
Scan never finishes.
Only once when I powered off printer, when I powered it back on .. scan did appear on Mac ..... as if it was waiting for a response.
Apart from that one occasion, this is 100% failure every scan
The MAC book is on Mojave 10.14.5 please don't suggest upgrading to Catalina, as this is not supported on the corporate environment, and this Mac is only 1 month old .. it was supplied with Mojave.
Currently have to use Printer on a PC, create Scan then email to MacBok ...... not very efficient.

Know that I have no business here - I don't use Mac OS and cannot even begin to defend Easy Scan.
I will try to give you "something" so you can perhaps move on.
This printer is nearly ten years old - nice tech, but "getting up there" in age.
So What?
Regardless of the fact that the Full Solution Software claims a date of Oct 9, 2019, the "Fixes" also say this is the Original Driver. May not matter. I do not know enough about Mac printer drivers to make any assumptions.
Easy Scan says it is compatible with anything Mac flavored newer than 10.10 - I would assume the application is at least reasonably compatible with the printer, though, again - the hardware is nearly ten years old. Old Firmware, maybe?
If you have not done so, consider using (as a matter of moving forward from Stuck) Image Capture or perhaps even the HP Smart application. HP Smart is also very new code but perhaps it will better get along with your printer.
HP Printers - How to Scan (Mac)
The printer nicely supports Ethernet - considering the nearly ancient wireless in the the printer, wired Ethernet is generally going to be your best option. It is even possible that the Wireless if it is B/G is not connecting well enough for the scan operation which does, by its nature, demand s a strong and very stable wireless packet transfer.
Depending on how desperate you are, you could connect your printer to the Mac with a USB printer cable - doing so, of course, precludes using anything that requires the printer to be on the network.
I have exhausted and even exceeded the little I know about the subject.
