From the printer, I can scan to a network forlder. But I do not see an option to scan both sides of the document. I am able to scan both sides of a page when I used the "insert from scanner" option in Adobe Acrobat so I know it's possible. I just need to figure out how to do it from the printer to a network folder.

What can be done from the printer control panel differs from what can be done using software on the computer.
It appears that you have the "little brother" of this printer series. According to the Specifications, the "fnw" model does not provide automatic duplex. This, too, might influence which tasks - and how many details - are available for tasks set up on the printer control panel.
More simply stated: If the setting is not available, the feature is not supported.
The how-to document is a bit helpful and almost completely devoid of any helpful details:
The User Guide explains the various methods to set up / use the Scan to Network Folder feature - starting on Page 63
Note the suggestion (in the User Guide) to use the Embedded Web Server (EWS) to configure Scan to Network feature.
Without the ability to use auto duplex, the setup would rely on having a "manual" duplex command available to configure the job.
If there is a way to "pre-set" the printer to prefer duplex, the setting may be in the EWS, perhaps under Paper Preferences (wording is likely different).
