The HP Printer Division Software Unit seems to have produced an inferior HP Smart application that removed the ability scan and collate a multiple page two sided document.
The current HP Smart scanning program is no more than an API for the Windows Fax and Scan program.
The HP Printer Division Software Unit did not produce a backwards compatible HP Smart server application product that incorporates the features and functionality of the HP Printer Assistant software.
The HP Printer Division Software Unit seems more intent on tracking and controlling the use of the printer by the individual home user rather improving the printing experience for the customer.
I should not have to sign on to the HP Smart application to print or scan a document on home my hone system.
Does the HP need to be informed of my when my printer was used and/or how many pages exist in a printed or scanned document?
I want to be able to use my original desktop software with my HP8610 printer rather than HP Smart software.
For HP Printer Division, a better customer experience would be to provide a way for customers to return to using the HP Printer Assistant Program rather than the HP Smart program.

Use of the HP Smart application is optional.
True - there are differences between the application and the full driver printer software.
True, too - the Full Feature Software / full driver printer software is an older version (and will not be updated or revised for this older printer).
The 8610 is the "little brother model" in the series -- it does not support automatic 2-sided scan.
There is no software workaround to add features (that are) not in the printer hardware.
Software cannot override the hardware limitation.

The HP Scan version installed with the Full Feature Software is likely adequate to the task -
For example, the driver might support scanning one side of the stack (pages), rotate-replace, scan the other side and automatically reorder the pages for you.
Select Page Sides = 2-sided (manual)

Load your paper / stack to be scanned
Next, open
HP Scan
Create / Select a Shortcut to use
Adjust the settings for the current job, including the Page Sides option.
Next,
If changing the way the content is saved - for example,
Open More > Destination > File Type
Check / UN-Check "Separate file for each scanned page"
Click OK to save sub-menu changes
Click < Less menu to return to main scan menu
When ready > Scan

If the native HP Scan software installed as part of the Full Feature Printer software lacks the feature to scan-flip-reorder, consider adding / installing the HP Scan Extended software. HPSE is a subset of the HP Scan software released in 2015 -- HPSE includes some nice features.

- Although HPSE appears to be a separate software, HPSE is dependent on the infrastructure provided by the Full Feature Software (full driver). The Full Feature Software for your printer should be installed before installing and using HPSE.
- OPTIONAL: Add HP Scan Extended shortcut to Taskbar / Send to Desktop / Pin to Start
- Open File Explorer > Navigate to C:\Program Files (x86)\HP\HP Scan Extended\bin
- Right-Click HPScan.exe > Select Pin to Taskbar
- Right-Click HPScan.exe > Select Send to Desktop (Create a Shortcut)
