Hi. This is a repeat of a question that I've seen raised before but with a slightly different take on it.
The requirement is to scan multi-page double sided documents on my HP All-in-One 3850. I've done this in the past 2-3 year ago with the same PC/ Printer - Scanner by selecting the 2 side option on the scan menu and manually turning the document over once first sides were scanned and reloading in the Document Feeder. This used the full software version HP Printer Assistant, HP Scan option.
I'm now trying to do the same thing on a similar document but the 2 side option seems to have disappeared from the menu - it only offers 1-side scanning. I can only think that it's a software update that removed the option or I can't remember where the drop-down was located (but I have searched all sections HP Printer Assistant.
Any ideas or alternative ways of scanning multi page double sided documents on a 3850?

I did not find an HP 3850 -- might have missed it?
We do have "HP 3830" printers, one DeskJet and one OfficeJet --
HP DeskJet Printers
HP OfficeJet Printers
For the purpose of this answer, I am choosing the OfficeJet and a currently supported version of Windows.
From your description I am guessing you were using the HP Scan software - part of the full driver printer software.
Example - HP Scan (original format) Main Menu - More > Destination
Main Menu - Page Sides = 2-sided (manual)

Perhaps the full driver printer software is no longer installed
OR
The full driver printer software is installed but is no longer working for any reason, including but not limited to Windows Updates.
OR
The full driver printer software is installed and is working -- but Printer Properties is not pointed to (selecting) the HP Driver.
Any of these can happen.
One or more of the following might (should) fix it...

Printer Software
If you have not yet done so, install the Full Feature Software / full driver printer software.
HP Full Feature Software / Full Driver printer software - supports printing and scanning from the web, printing in in other software and programs (for example, Word), and provides access to the full range of Printing Preferences / Shortcuts. The full driver generally adds at one, possibly least one, possibly two shortcuts to the Desktop: Printer Assistant, HP Scan Assistant, and/or HP Scan.
NOTES:
HP Scan is not installed if the printer does not support Scan.
The Printer Assistant is not installed if the type of full driver software does not support it. If the printer model includes built-in Fax hardware, the software supports the setup and use of the Fax driver.
No Sign-in required to use full driver printer software.
Reinstalling?
- Uninstall existing full driver printer software from Programs and Features.
- If your printer includes a separate "help" in Programs and Features, uninstall that, too.
- Restart the computer and log in.
- If the printer is connected to the computer using a printer USB cable, remove / disconnect the cable before loading the software.

HP OfficeJet 3830 series Print and Scan Driver and Accessories
Download package > Save > Right-Click on the installation Package > Run as Administrator
If / When asked, opt for the Full Driver / Full Software to be installed.
Using USB? (Re)Connect when instructed to do so.
After the software is installed, Restart the computer and sign in.

The installation of the full driver generally adds at least one or more shortcuts to the Desktop.
Note: Printer Assistant, HP Scan Assistant, and HP Scan are dependent on printer model and supported software options.
- Printer Assistant – Where still supported as part of the full driver printer software
- HP Scan – Shortcut on Desktop named for the printer model
OR
- HP Scan Assistant – For those printers that no longer provide the Printer Assistant
- HP Scan - Shortcut named for itself
AND / OR
- When installed, HP Universal Scan software adds a separate self-named “HP Scan” shortcut
- NOTE >> If you install the full driver printer software, installing HP Universal Scan as a standalone software from category Software & Drivers is not necessary. The system will allow you to install both.
Printer Assistant shortcut > Tab Scan > Manage Scan to Computer > Enable
Or
HP Scan Assistant shortcut > Manage Scan to Computer > Enable
