I just bought an HP 7301. Is there a simple way to copy a single sided document to a double sided document without scanning the whole thing to my phone or computer? Online help through the smart app tells me to use a setting button that I can't seem to find on this model printer.

There is no Settings button, whatever you are reading online is not for your printer model.

Thanks for using the HP Support Community. Apologies for jumping in here.
Try following this example on 2-sided copying, the printer shown also has a 1-sided ADF (similar to the HP Smart Tank 7301.

Unfortunately, the 7301 does not have that type of control panel. It has copy buttons for ID, black and white, and color. There is also a button with an letter I, a button with a down arrow, and one with an x. There doesn't seem to be a way to tell the copier to copy onto 2 sides. I may just have to return this printer if making a simple copy is this complicated

Also not what I needed. I bought a machine that listed duplex printing as a feature. I have a one sided document that I need printed on two sides. Duplex printing means that I shouldn't have to take the paper out and flip it by hand to make two sided copies, but I can't figure out how to do that. If it only does duplex printing but not duplex copying, then I was misled into buying the wrong machine.
