@MacMahon7510, Welcome to the HP Support Community!
- Are you trying to scan photos or documents?
- You can save several scanned documents to one file only in PDF format.
- If you have selected to save the scanned files in JPEG, you will not have an option to save it as One single file.
Let us try these steps that may resolve this issue:

Search the Mac for scan, and then click HP Easy Scan in the list of results to open the app.

Scan a document or photo using the app.
You can either load all the documents to be scanned on Automatic Document Feeder or load it one by one on the scanner glass. -
Once scanned, click scan next item(if from glass), Click Send, and then click Folder to save.

Select PDF in the Format menu. NOTE: HP Easy Scan does not support adding multiple JPEG, PNG, or TIFF photos into a single file. You must save photos in the PDF format to save them all in one file.

Click the Where menu, and then select a folder to save the scan to.

Select the checkbox next to Save all items to a single file.

Click Save.
