I have same problem with updated version on my imac (Catalina 10.15.7 ) will not scan - I installed the Easy and now can print but not scan. there is no help from HP.

I finally got it to work. I did have an update to the system software. Not sure if this had anything to do with it. Thank you for your patience!

I am having the same problem with my 8600 plus.   I tried everything you said and its still not working, this is messing with me submitting my work.  I think I am going to have to get another printer, this scanner worked fine before my macOS Catalina 10.15.7  I am so frustrated, its the HP printer not the mac

I have an HP MFP M281dfw using Mac OS 10.14.6 Mojave.  I had the same exact problem and my Hp Easy Scan  and Hp printer utility app no longer functioned producing an error message.  I downloaded the package and ran the installer successfully.  I rebooted my Mac and now the HP scan works and so does the HP printer utility.  Easy fix.  Thank you.  

Just a Mac dude.
