I have tried using Adobe Acrobat DC, HP Smart, and Windows Scan to scan multiple pages from my HP 9010 Printer/Scanner, and have not been able to scan more than one page at a time of a very large legal document I need to create an electronic copy of.
I've tried the following:
1. Cleaning the ADF rollers and separator pad multiple times
2. using Adobe Acrobat DC, HP Smart, and Windows Scan
3. Completely uninstalling and reinstalling the latest HP drivers & HP Smart app.
In Windows Scan, I can at least hear the machine trying to scan a second page, but then it always results in an error when the ADF can't pick up the following pages. (If I restart the scan, it will pick up another page, and then give the error message when it again tries to pick up a subsequent page.)

I can offer limited advice on the subject.
Check to make sure what you are trying to do is supported (for example, paper size, source, duplex).
For example
Paper size and the weight of the media you are trying to scan can make a difference in the results.
Number of sheets in the ADF is restricted as explained in the printer Specifications.
If the paper (original) is too thin, too dry, too damp, odd colored, curled or creased, the results might be other than expected.
The scan will fail if the document is two-sided but not supported for two-sided scanning at the selected source and size.

and / or
The source of the problem may be a error in the configuration (job setup).
and / or
Scanner might be dirty in an area not (yet) cleaned or in need of some other form of maintenance.

Thank you for your advice, but unfortunately it did not resolve my issue.
I'm trying to scan a clean, single-sided document, using 20lb paper, using the default HP settings (so no duplexing, or anything "tricky"), and my device is new, so dirt should not be an issue (but I did try cleaning the ADF pads). It's the first time I've had an HP printer, and the first time I've had this type of a problem with a new printer. Very disappointing, HP!

I agree it is disappointing.
The printer is rated to scan documents as outlined in the Specifications
Software, for the most part, while not always self-explanatory, is able to handle basic jobs of the type you have described.
In other words, when you are doing it right, it should work.
For those reading: Examples and more information in References (end of this message).
Having completed all the troubleshooting, having used the appropriate software to accomplish the task, having checked the media type, shortcut, source, and paper size in that scan software, it is perhaps the time to ask for help.

Reminders
- Use the serial number of the device to submit the case (do not post that information on the Community).

If your product supports your operating system, HP offers your driver and software at no additional cost through the HP website.
Use caution when dealing with any website that asks you to pay for HP driver downloads or tools that claim to diagnose your HP products. These websites might not be affiliated with HP in any way.
Do not install BIOS updates from a motherboard manufacturer's website. Only install BIOS updates from HP. Installing BIOS updates from the motherboard manufacturer can prevent the computer from accepting an HP system recovery. This could result in a loss of data.

Check / Adjust / Retain the Paper at the Printer Panel
Open Printer Tray,
If you have not yet done so, add desired paper type
Close Tray
IF applicable for your printer:
Look for a message on the Printer Control Panel,
Click Modify (wording varies), set the paper size and type, Click OK
NOTE: If the size of the Paper Size is not in the Drop-down list, Select Custom
Set the Preferences - Windows
- The following assumes the Full Feature Software has been installed.
- Check / enable the printer as the “Default Printer”
- Select and adjust settings in each category for the Media (kind of paper), source (tray), and paper size.
Control Panel > icon view > Devices and Printers > Right-Click on your printer > Set as Default
Control Panel > icon view > Devices and Printers > Right-Click on your printer > Printing Preferences >
Tab Printing Shortcuts > Click / Highlight preferred shortcut > Click Apply > Click OK to exit
If the printer software supports the feature, change the settings as desired, then use “Save as” to create a Custom Shortcut.

Windows key + S (search for) Printers and Scanners
Left-Click on (your) Printer > Manage >
Printing Preferences
Select a shortcut and / or set “preferred settings” for paper, source (tray), other settings
Optional (if / as supported on the printer): Save As > enter a name for your custom shortcut
Click OK to save the preferences
NOTE: Scanning defaults are set up in a similar manner.

- Open your favorite browser > type / enter Printer IP address into URL / Address bar
