My wife purchased an HP DeskJet 4100e printer for her business, I set it up for her and was testing the Scan option, I used my email address and now when she scans anything it uses my email address as the sender and not hers. How do I change that? do I need to re install the software using only her business email?

Review
"Share" is an option of HP Smart that uses the sender's email address as added to Windows Mail (application).
I think if you want just the "one" sender, removing any additional email accounts from Windows Mail would take care of that.

Caveat >> Create and use an App Password for accounts requiring 2-step verification
Business email might not accept email from a program -- many business email servers specifically prevent "machine generated" mail.
Depending on the email provider, that provider might require an App Password to be created and used with any "third party" application. Requiring the App Password in place of the user's own email account password is generally a result of that email provider having removed (disabled) "Less Secure Apps" and moving to a 2-step verification methodology. Google was the first, many other providers have followed suit.

What I'm not sure about is whether the actual HP Account that drives the HP Smart application impacts how the application will be used in the context of you having set this up for another user.
HP Smart requires the user sign into the account using their HP Account credentials -- if each of you has a separate HP Account and you used "your" credentials to sign into the HP Smart application, it is likely that the sign-in, adding the printer(s), and other setup must be done for the other user of the application using that user's HP Account credentials.
