For scanning both sides manually be sure to install the Full Feature software below @bigdud, then follow @greenturtle's suggestion:

For OCR, the HP Software for your printer does not offer OCR capabilities and a 3rd party software should be used for any such.

There is no option for 2-sided scanning in either HP Easy Scan or HP Smart Scan or the web-based version Embedded Web Server for Mac. I am using OSX 10.13.6. with an OfficeJetPro 8025.
Why can't they just add this option for the HP Easy Scan software, which is pretty good softare. I can easily flip the stack of papers over and scan the other side but we need a function to sort them properly before saving the file.

I found an app that does offer 2 sided scanning as an option, but I'm not sure what the name is. A link was provided earlier in this post (I think) but there SHOULD NOT BE MULTIPLE PIECES OF SOFTWARE FOR THE SAME FUNCTION.
The software functions need to be pared down to understandable choices and not an array of similar functions that only serve to confuse the user.

What is "full featured" software? And why would I want to use anything less than that?
One of the dumbest things I've encountered since I recently bought the HP 8035 is that the highly-touted HP Smart app has no provisions for ADF duplex scanning but the "full-featured" software does. Furthermore, questions posed to the "answers" section on Amazon have repeatedly been answered by saying "Yes, the HP 8035 has ADF Duplex and OCR scanning" when it appears likely these people have no idea what the hell those functions mean.
I've never had as much trouble setting up a printer as I've had with this one. The ADF duplex and OCR scan were the basis for me selecting the HP 8035; imagine my surprise when I found out it had neither.

I stand corrected - you CAN manually scan and duplex with the HP Easy Scan software (Apple OSX) - the setting are a bit hidden.
1) Go into User-Defined Settings: https://cl.ly/f09b9f
2) Choose Scan both sides of page and choose Side: https://cl.ly/9513f9
3) After all of your first side scans are finished you should get a dialog box - follow the directions here: https://cl.ly/fb4676

It's not the fastest process in the world (get the OfficeJet 9025 which says it scans both sides automatically - I assume it works) but if you are only scanning 2-sided occasionally, this should probably work for you.

I have a mac and the "Software Utility" link is no longer on the website as an option for me to download. I would like to be able to scan 2-sided, but can't seem to do that without the full software (not just the app).
Please help. The printer is brand new, and I just want to be able to print and scan documents easily.

Which version of macOS are you using?
The full-featured software for HP OfficeJet Pro 8025 All-in-One Printer is not available on the HP Support site.
According to the printer specifications, this printer do not support automatic 2 sided scans. You will have to do it manually using the HP Smart app.
Click here to know more about the app.
HP OfficeJet Pro 8025 All-in-One Printer is AirPrint compatible. Install the printer using AirPrint driver.
Please ensure that the printer is up to date with its firmware and Mac is up to date with its software. If you are unsure you may use the links below to update the printer firmware and Mac software:
1.) Click the Apple menu, click System Preferences, and then click Print & Scan or Printers & Scanners.
2.) Check if your printer name displays in the Printers list, If your printer is listed, click the printer name, click the minus sign to delete the printer.
3.) If you see multiple printer queues for the same printer, remove all extra printers by selecting them one at a time, and then clicking the minus button at the bottom of the list.
4.) Click the plus sign, click Add Printer or Scanner, click the printer name.
5.) Click the Use or Print Using menu, select AirPrint in the pop-up menu. Then click Add.
6.) Try to print.
Now, use HP Easy Scan to scan from your MAC
Refer to this document to know how.
Note: make sure the 'scan both sided of pages is checked'.
