Scanning multiple pages to fit all on one page is a lot harder than simply scanning multiple pages to be saved in one document.  I can imagine a possible scenario to do the first though it's going to take a decent, high-end printer, some skill to configure the job, and perhaps some trial runs to obtain the expected results.

 

Assuming the goal is to scan several standard size pages and save into one file / document.

 

The task is easier when the original document (images??) are on sheets of paper that can be stacked and scanned using an Automatic Document Feeder.

 

If your mystery printer has and ADF, you are half way there.

 

Most printers do not automatically scan 2-sided documents.

 

Scanning 2-sided documents is possible -- the amount of work required depends on the Operating System / version and the tools -- applications or software -- that are available on the device (computer, tablet, phone.

 

Everything is generally easier in Windows -- the applications and software are usually more robust.

 

For example,

HP Smart generally defaults scanning the original and any "added" pages for saving into one document.

 

HP Scan (part of the full driver printer software in Windows), can be set either way.  That means, each scanned page can be its own single page file or all scanned pages can be saved as a single multiple page document / file.  If the printer includes an ADF, HP Scan can be instructed to scan the first side(s) of the document and then reload stack and scan second side(s).
