I am just trying to find out if this scanner/printed allows the me to scan in a stack of documents, send them to a general folder as separate PDFs to be renamed and sorted later. I used to use a Fujitsu scansnap I 500 that did have multiple options for how you want to scan things in.
Does the HP LJ m227-m231 offer any options like this?

Yes, it does.
Open the HP Laserjet Pro M227-M231 software and click on Scan a Document or Photo.
Select Save as PDF and click the More > link at the top.
Open the Destination type and click the File Type drop-down menu (where it says PDF), then check the box to Separate files for each scanned page,
Press the disk icon to save the change for the existing shortcut, or press OKK and then the Create New Shortcut button.
