Are you using the new HP App to do the scanning?  if so, use the universal scanner tool that has a dedicated scan app

Possibly a windows update replaced the full feature printer  driver with a generic windows 11 one that does not work the the new HP App.

 

This says windows 7 but it runs on 11 and is full featured printer driver

 

If you want OCR capability you may need to get the IRIS modules, both PDF and OCR.
