To provide you with an accurate solution, I'll need a few more details:
Have you checked the Printer specifications for the scan supported size. If you haven't gone through, please click here for Printer specifications.
In the meantime, If you are using the correct paper size, then I would suggest you follow the steps suggested in the support document for - HP Printers - How to Scan (Windows)
If you're using a paper which is not supported, then I would suggest there is no option to resize it.

Apologies for jumping in unannounced.
@Jeet_singh has provided the solution : If the paper is longer than what is supported, you cannot scan the document / image into the computer at a single pass (single scan).
There is a workaround you can try - whether this is of interest depends on whether the hassle is worth the result.

I have yet to receive any excited response to the workaround. Smiling. It does work - I have had to do this. The method is rather a lot of work for a document / scan. It might be easier to take the document to a local Print Service (Staples?) and have the document / image professionally scanned to a USB drive.
