As an update, none of the wireless suggustions have worked. I agree with the earlier posts, HP needs to update the software/drivers.
I'm only able to scan if I have the printer hardlined/plugged into my comptuer, otherwise wireless is useless.

I've updated to 10.12.5 version (Comboupdate)
Now, all works fine for me (scanning include)
The driver version is the same (19.13)
Incredible but true !!!!!!
Anyway I think HP would have to review the drive and deliver a new stable version.

@pisca, try update with Combo update ( https://support.apple.com/kb/DL1918?viewlocale=en_US&locale=en_US). After this update, the scaner works in my 3 MACs (2 MBPro + 1 MBAir). Good luck!!!

@viceberg, thanks for your suggestion. I tried but on my Mac still got the message "Failed to open a session on the device. (-9927)" for either the HP driver version 19.13 or the secureAirPrint driver version 2.0.
Nevertheless, the scanner is working on my macAir running also under macOS Sierra 10.12.5 and using the secureAirPrint driver version 2.0 via WiFi. So it looks like a kind of network problem.
My Mac is connected via an Ethernet and both my Mac and printer have fixed (manually set) IP addresses. I keep trying.

Here again with the same problem .........
Scan error when attemp to scan with macOS 10.12.6 (combo update applied) in my 3 MACs
The driver version ...... 19.13 .... as usual.
Printer Firmware updated to last version (20160921)
Connection via Wifi
Please, HP Support Agents, I think HP have to deliver a new driver version that solve the issue and don't waste users time trying workarounds/procedures.
A new driver version asked for us one year ago.... When HP solve this? HP will work to solve client's issues? We need to buy a new printer?
PD: I've a W10 machine. From this PC the scaner works fine. Also wifi connection.

Don't know why, don't know when but my scanner is working now.
In the beginning of November and still using macOS 10.12, I just tried “system preferences > Printers & Scanners > Open Scanner…” and it worked! And HP Easy Scan worked as well.
Currently I am using: macOS High Sierra 10.13.1, HP driver version 19.13 and firmware with date code 20160621. The same versions as in May.
Nevertheless I noticed some recent updates from the App Store:
- HP Printer support Update version 5.1 was installed (twice) on Oct 25, 2017
- HP Easy Scan Version 1.9.1 was installed on Nov 6, 2017
