I'm sorry to ask such question.

I'm connected on the web with the IP of the printer. I'm signed in as admin. I'm then trying to set up my scan to email and when I added the SMTP for my iCloud account (smtp.mail.me.com, port: 587 and my account detail using an app-generated password) I always get the following message: 

  1. Could not connect to the server. Please verify the server settings.

what is wrong with my approach

I use a MacBook Pro  M1 under IOS Ventura 13.1

I have had a few clients with issues recently and after a lot of time troubleshooting a similar error I stumbled upon a setting that made no sense but did solve the problem.

 

In the embedded web server of the printer, go to networking tab, security and you will see a section for TLS. Set the Min to 1.2 and the Max to 1.2. I have no idea if this will fix your problem but it did for a customer using Office365.
