I figured out the real underlying problem here. With the previous printer firmware that used SMB v1, in order for it to access my "guest ok" share to write to on my Netgear ReadyNAS, I had to set the username to "guest" in the HP printer UI. However, with the new firmware that uses SMB v2, writing to the share fails with these messages after turning up logging on the ReadyNAS side:
check_ntlm_password: Authentication for user [guest] -> [guest] FAILED with error NT_STATUS_NO_SUCH_USER
Editing the configuration on the HP UI to leave the username blank allows it to correctly connect as guest, and the ReadyNAS can then be changed to allow SMB versions 2 through 3, disabling 1 again.
