Product: HP OfficeJet Pro 6968 All-in-One Printer
Operating System: macOS 11.0 Big Sur

I have an Officejet Pro 6968 fax, print and scanner. I need to scan 80 printed pages which have content on both sides of the page. I'm using the HP Smart app, but don't see an option to do a double sided scan.

 

If I were to scan the even pages first to a PDF document and then scan the odd pages to PDF, how could I combine them so that they are in the correct sequential order?

You would need a PDF program that allows you to edit. Many of the programs that can read a PDF do not offer edit features. You could try importing the PDF into a word processor program and edit that way.
