If it helps one solution I found (still a rubbish one but saves you having to trek PC -> printer continuously) is to scan individual sheets to create individual PDFs and then you can combine PDFs into a single one thereafter (on Mac you can do this via Preview).

 

Unfortunately the real solution for us all is to not have bought this printer version and gone with one with better scanner functionality..next time..
