Hi - I think this printer is meant to have a scan to email option but can't figure out how to get the option to even display. I tried the IP address to get to the advanced settings but no scan to email settings there. Thanks.

Hi,

Your printer does not support direct scanning to email , you may scan to a computer from the printer front panel or use the HP Smart app.

 

Your may use HP Smart shortcuts to scan to email from the HP Smart app or, while configured you may use a shortcut directly from the printer front panel as well, please follow below steps to activate and use HP Smart shortcuts:

I just saw a YouTube video where a user was able to scan from the control panel on the 8025e and there was an email option icon right beside the scan icon.

This is correct for HP Officejet Pro 8025 or 8035 printer indeed, but not for an HP Plus printer as 8025e, for the specific model you may use Shortcuts for this purpose, not any other feature as the 3rd party video describe, this is not applicable for an HP Plus printer.
